  HEALTHY FOOD GLOSSARY

Flaxseeds
(a.k.a. linseeds)
Flaxseeds are loaded with Omega-3 fatty acids (the good fats) that keep your heart healthy, reduce inflammation, and help to balance your hormones. Both the ground seeds and the cold-pressed oil (we serve both) are amazing superfoods that you should try to include as part of your diet whenever possible. Our flaxseeds are certified organic, harvested from outer Mongolia, and refrigerator-stored to preserve freshness.

  Sesame Seeds
Sesame seeds are the most calcium-rich food source on the planet! Plus they taste great and are loaded with copper, magnesium, and easy-to-digest vegetable protein and lipids. Our sesame seeds are certified organic, harvested from outer Mongolia, and refrigerator-stored to preserve freshness.

  Cold-Press Oils
In our kitchen, we use olive oil, coconut oil, sesame oil, sunflower oil, and flaxseed oils. All are cold-pressed, organic (whenever possible), and stored in dark bottles to protect from light damage.

  Sea Salt
We use all-natural sea salt at the Love Kitchen gathered right here in Thailand! Our sea salt is packed with 84 trace minerals including calcium, magnesium, potassium and sodium (often referred to as "electrolytes") in their natural ratios to promote health and wellness.

  Masticating Juicer
We use only slow-moving, masticating juicers which essentially “chew” up fruits and vegetables extracting the juice without oxidizing or losing any of the vital nutrients.

  Vitamins/Supplements
In our “Super Juices,” we use Garden of Life superfood supplements. Garden of Life is one of our most-trusted U.S.-based sources for 100% organic, plant-based supplements.

  Apple Cider Vinegar
We use a special apple cider vinegar that’s raw or “living.” It’s made from fermented organic apple juice, and the bacteria in raw apple vinegar (often called “the mother”) is extremely beneficial for strengthening your digestive system—particularly after a cleanse.

  Young Coconut
Young coconuts are one of Thailand’s most coveted foods. Coconut water is loaded with electrolytes. The water itself has been “filtered” for 9 months as the coconut is growing, so it’s 100% sterile. In fact, coconut water is so similar to blood plasma that it was used intravenously during World War II (I.V. drip of coconut water anyone?) to re-hydrate wounded soldiers.

The meat of young coconuts (more so than mature ones) is extremely rich in lauric acid, a fatty acid that has been shown to have powerful anti-bacterial and anti-fungal cleansing properties. From curries to smoothies, skin creams to desserts, coconuts are truly amazing!
